Carrot muffins



Sometime last week, i was in the mood to bake something different. So i looked around the house for some inspiration, and happened to find a bunch of carrots in our vegetable bin. And i thought to myself, 'hmmm...what can i do with these???' Then i logged on to the internet to look for recipes and found one for carrot muffins that looked easy and still promised to be yummy. What they forgot to mention was how awesomazingly yummy it would be!!!


You will need

1 cup of raisins
2 cups of warm water
2 cups all-purpose flour
1 tablespoon baking powder
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
4 eggs
1 cup vegetable oil
3/4 cup brown sugar
2-3 cups grated carrots

What to do

1. Soak raisins in the warm water for about 15 minutes. Discard water afterwards and set aside.

2. Preheat oven to about 180 degrees Celsius, and line cupcake pan with the paper cases.



3. In a large bowl, sift together flour, baking powder, baking soda, salt, and ground cinnamon. In a separate bowl combine eggs and brown sugar and mix properly. Then, combine egg mixture and flour mixture and mix. Fold in carrots and drained raisins.


4. Spoon mixture into lined cupcake tin and bake in the preheated oven for about 20-30 minutes, until pick/fork comes out clean after piercing through. Allow to cool for about 30 minutes before icing, if you want to. Otherwise, enjoy your yummy carrot muffins!!!









Note: If you are like me and would always pick out raisins in cakes and throw away, u can decide to omit the raisins...or just add em and pick out like i did! lol. If you want to take them out, you may substitute with chocolate chunks/chips. I personally have not tried that, but i think it could work.
