Geli's Pine-Mango Smoothie

Hey guys...
So yesterday, I got this craving for a smoothie and as much as I tried, I just could not shake the feeling. So I hopped into the car, went out to buy some fruits, yoghurt, milk...and well, you can imagine how it ended!



You will need (makes about 5 glasses)


1/2 a pineapple (a big pineapple that is...and it has to be sweet!), cut into chunks
1 big mango, cut into chunks
3 tablespoons of natural yoghurt
1/4 cup milk
1/2-1 teaspoon sugar (optional)...just in case the fruits are a bit sour
1/2 teaspoon vanilla essence
Ice-cubes


Directions


  • Put all the ingredients into a blender and pulse/blend till all combined. The ice-cubes help with the thickness, so you can use your discretion as to how many to use. I used about 6 cubes.



  • Serve chilled + ice. ENJOY!!!




Last Supper!

Whew! Since Monday that I arrived in Kumasi I haven't really had any good rest. The week was long and exhausting, from buying of stuff in preparation for my Oath Swearing to packing of my personal effects back to Accra (home).

My Big Day (Oath Swearing) was great :D. After all the exhaustion I definitely needed to have a binge so I and two of my fellow fresh Doctors and two good non-doctor friends decided to have a last supper. We set off not knowing where to go so we allowed the wind to carry us then I remembered a cool place near the Stadium in the same compound as Ababio Express. This restaurant is called Aboude! Great place, Their chicken reminds me of another good restaurant in Accra (Papaye) and a great friend who loves meat the same I do.

This was my second time going there. The first time I had half chicken with chips. Really good chicken, really good, well spiced. One of my non-doctor friends ordered this:

Since I always like to try new things I ordered a cheese burger on this second visit to the place. Unfortunately there were no buns for the cheese burger I guess cause it was late. So the owner (very funny dude) suggested he would wrap it in pita bread with some chips, two of my friends had a 'Crispy Sandwich' also wrapped in pita bread.

We 'downed' the sandwiches and food with an amazing orange juice. It was really chilled and we even went for a second round of juice. They also have this tangerine and orange mix, mehn it's pure bliss had that my first time there.

So that's Aboude for you. Obviously this post will be of use to those who find themselves in Kumasi, otherwise you just have to drool over your keyboard looking at the photos. So do check it out and let us know what you think of the place.


Iced tea

WARNING: This drink is addictive. Consumer discretion is advised.


This is a recipe that has been passed from person to person, class to class, and has been used for many events at the School of Medical Sciences, Kumasi, where i trained. If ever there was a party, games, drink-up, whatever, iced tea had to be there! At this point i'd like to recognize the person who brought this recipe to us, Lydia Gyan-Kesse...thanks a lot!!!
I'm pretty sure with all the passing around, the recipe has been tweaked from what was originally shared. But the essentials still remain, and i'm just going to share how i have been making it...and it tastes absolutely awesomazing! You really can't stop asking for more.

You will need 
(this makes quite a lot...probably for about 25-30 or so people). Unfortunately i have a very poor sense of estimation and i always make this using my discretion for the measurements so you would have to bear with me.

Lipton yellow label tea (or any other black tea) - 1 pack (25 tea bags)
2 dozen large lemons
Granulated white sugar
Boiling hot water
Ice cubes/blocks
Clean drinking water

Directions


  1. Take aside about 6 of the lemons and cut up into thin wedges/half-circles. Keep aside. Squeeze out the remaining lemons.
  2. Put the tea-bags in boiling hot water and allow to steep for about 2-3 minutes. Take out tea-bags.
  3. Pour in lemon juice and mix with tea. Next, add the sugar...the point is to keep on adding sugar until it tastes TOO sweet to drink. This makes the concentrated stock which will then be diluted.
  4. Next add the ice blocks/cubes/crushed ice and stir...then add the clean water and dilute to taste. Note that the ice would melt and dilute further so you don't want to over-do the water.
  5. Add the cut-up lemon slices to garnish. Stir, pour into cups and ENJOY!!!
