We are back for the continuation of our De-stressing feast. I started off with irresistible Red Velvet Cupcakes now I am on to the main meal. This was my best part of the feast. You can serve the beef sauce with anything you wish, you can even use it for a Shepherd's Pie. Actually this happens to be a slightly modified Shepherd's Pie recipe. So let's get cooking.
Ingredients
3 lbs. Ground Beef
2 tbsp. olive oil
2 large onions, chopped
4 cloves garlic, minced
2 ¾ (22oz) cup diced tomatoes, drained
2 teaspoon Worcestershire sauce
1 ½ (12oz) cup peas
1 ½ (12oz) cup diced carrot
3 teaspoon dried basil
3 tsp. dried oregano
2 tablespoon cornstarch
1 ½ tsp. salt
1 tsp. black pepper
Preparation
In a medium sized pot over medium heat, warm olive oil. Add onion and cook, stirring, until translucent, 3 minutes. Add garlic and cook 30 seconds longer.
Add beef, increase heat to medium-high and cook, breaking up chunks, until meat is cooked through and beginning to brown, 8 minutes.
Stir in tomato, Worcestershire, basil, oregano, salt and pepper. In a small cup, whisk cornstarch with 1 cup water. Add to skillet and cook, stirring, until liquid thickens slightly. Lower heat.
Layer vegetables on top of meat cover (don't mix vegetables with meat will end up being too cooked, so just layer), and cook on very low heat for 2 hours. If you choose to serve the sauce with the Mashed Mozzarella Potatoes & Sweet Corn then come along.
Sweet Corn & Mozzarella Mashed Potatoes
Ingredients
4 ½ cups sweet corn
3 ¾ pounds potatoes, quartered
1 ¼ cup whole milk (in the box)
¾ cup (2oz) shredded mozzarella cheese (you can add more cheese if you prefer)
4 ½ tablespoons butter, softened
½ cup chopped fresh coriander
1 ½ tablespoon fresh lime juice
1 teaspoon salt
1 teaspoon freshly ground black pepper
Preparation
Place potato in a saucepan, and cover with water. Bring to a boil. Reduce heat; simmer 15 minutes or until tender.
Drain and return potato to pan. Add milk, cheese, and butter; mash to desired consistency. Cook 2 minutes or until thoroughly heated, stirring constantly. Add corn, coriander, and remaining ingredients, stirring to combine.
