Coffee Junkie: Coffee Pancakes


Who doesn't love coffee? Well I know I do. I just try not to over indulge but it is hard when you see a recipe that has the one ingredient you love. I was pretty excited to see this almighty pancake recipe which called for coffee. Without thinking twice I found myself planning breakfast. I love Sundays because it's on these days that I can really chillax and be busy doing NOTHING :D! So what better time to have these delicious pancakes than on a day as great as Sunday. It was on this same day that I also decided to go sniff some flowers (with the camera) early in the am.




These pancakes are on point. You can't go wrong with them because they so simple and straight to the point. They are everything pancakes should be:  light, fluffy, slightly sweet, a little tangy with a total bonus flavor: coffee!

Am hungry, aren't you? So then let's get busy.

Ingredients

Yields 8 small pancakes

1 cup of all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoon sugar
1 egg
1 cup buttermilk
1 tablespoon instant coffee granules

Preparation

Preheat oven to 150˚F so you can keep the pancakes warm while the others are cooking.

In a medium bowl, sift together the flour, baking powder, baking soda, salt and sugar.


In a large measuring cup (or small bowl), beat together the egg and buttermilk. Next, whisk in the instant coffee until completely blended.

I couldn't get buttermilk so had to make my own: Mix 1 cup milk with 1 tablespoon white vinegar and let it stand for 10min and there you have it buttermilk.


In two batches, add the wet ingredients to the dry ingredients and mix until just combined. The batter should have some small to medium lumps.


Heat up your griddle or cast iron skillet over medium low-heat and brush with 1 tablespoon of butter. Using a 1/4 cup measure, add the batter to the warm skillet and cook until bubbles form along the sides and in the center. Flip. And cook on opposite side until golden brown.  Transfer to oven until you've gone through all the batter. Serve with warm maple syrup or honey and a dollop of butter.


Now here's a surprise; since I really don't know how to just keep things too simple I decided to give a little extra twist. What i did was to serve four pancakes with honey and a dollop of butter and the remaining four with a cream cheese glaze. Here's how to do the glaze

Cream Cheese Glaze:

4 Tablespoons butter
2 ounces cream cheese
1 1/4 cups powdered sugar
1 teaspoon vanilla extract


Prepare Cream Cheese glaze:
In a medium glass or microwave-safe bowl, heat the butter and cream cheese until melted. Whisk together until smooth, then whisk in powdered sugar and vanilla. Set aside.



I'll advice you prepare the Glaze first before starting with the pancakes. And yes it is AMAZING, I personally prefer the glaze.
